CRISPY POTATO SKINS

When you're making mash potato next, don't throw away the potato peels. Transform them into this tasty snack instead! 

Use a knife to peel the skins, then toss the potato peelings in vegetable oil to lightly coat.  Spread them over a baking paper lined baking tray. Roast in a 190C oven for 15 minutes until golden and crisp. Sprinkle with sea salt. Eat immediately!
